My Thoughts On the Four Seasons Singapore’s New Cocktail Menu, Polaroids of Singapore

One Ninety Bar at the Four Seasons Singapore has launched Polaroids of Singapore, a 16-cocktail menu inspired by the country’s four main cultural groups — Chinese, Malay, Indian, and Other. Each section was conceived with input from the One Ninety Bar team themselves, which shows in how considered the flavour profiles are. I was invited to taste all 16, which is quite the undertaking, and left with a short list of reasons to go back immediately.

Across the four categories, standouts were Bei Shi’s Dance from the Chinese section — Balvenie 12 Year Doublewood with Kyoho grape liqueur, a not-too-sweet profile that I’d happily drink all evening — and the Serai Fizz from the Malay section, light and bubbly enough to anchor a longer session at the bar. The Indian selection was where I was most curious, and the Yellow Dress delivered: elderflower paired with cinnamon is a combination I hadn’t encountered before and am now evangelical about. As someone who falls into the Other category in Singapore, the Royalty Scone was a genuine highlight — Bombay Sapphire Premier Cru Gin fat-washed with scone fat, giving a rich, buttery finish without any dairy. It made me reconsider everything I thought I knew about scones. The bar snacks are worth ordering too, particularly the Otak-Otak Stuffed Wings and the Boston Lobster Roll.

The space is sophisticated without being stiff, and the team are warm and genuinely knowledgeable about what they’ve put together. Whether you’re dropping in for an aperitif before dinner at One Ninety Restaurant, working through the menu properly over a few visits, or just want a nightcap after Orchard Road, there’s something here for all of it.
